Happy Holidays! Happy Dining! From The Nanny Chef

Hi everyone and happy holidays! I have been gone for a while. Just moved to my new place moving is such a hassel. Anyways i am all settled and ready to share some of my delicious recipes. This one is for the moms and dads out there who are trying to get their kids to eat meat like beef and veggies. I made this tonight and it was a hit. I call it Nanny's Veggie Burger. Here are the ingredients:

1 cup lean ground beef cooked & minced
1 cup cornflakes bread crumbs
shredded low fat cheddar cheese
1/4 cup milk
1 egg
1/2 tsp minced garlic
2 tbsp soy sauce
2 tbsp olive oil
1/4 cup chopped onions
1/2 cup chopped carrots and zucchini
1/4 cup chopped broccoli
1/4 cup cooked brown rice
salt & pepper

1. Brown beef on stove in skillet untill throughly cooked. Drain and set aside to cool.
2. In a large skillet with olive oil saute onions for 3 to 4 minutes. Add zucchini, carrots and broccoli. Add the garlic and cook until veggies are tender and well blended.
3. Add the bread crumbs to the meat and mix well.
4. Add meat and bread crumbs along with all other ingredients(except rice) in a food processor and mix throughly.
5. Remove mixture from processor into a medium size bowl. Fold rice into mixture and form into individual small to medium patties.
6. Coat a large skillet and cook patties on both sides on medium heat. Brown both sides.
7. Serve warm. Yummy!

Serves 4-6


Children are getting their protein, carbs, veggies some diary and fibre. It also tastes great! Serve with a bowl of fresh fruit after at lunch time or diner. Makes a great school lunch as well.
