Eating Healthy
Do you know foods that you ate growing up as a child are the very same foods you will most likely eat as an adult? Think about this for a minute. Example most kids love mac & cheese. How many of us adults love some good old mac & cheese? I grew up eating hot cereal(oatmeal, cream of wheat) and now even as an adult i can't seem to get over it. A nice warm bowl of cream of wheat is perfect for starting the day. Another food i enjoyed as a child was bread with butter and cheese. My mom would pack it for my school lunch or it as eaten as a snack. I still occasionally have this yummy sandwich today. Ofcourse now i made it lowfat(whole wheat bread, lowfat butter and cheese). My point? It's so important to feed your little ones nutritious foods(fruits, veggies, low fat meals) so as adults they will continue a healthy diet making good choices for themselves and their families. It's never too late to begin. Just do it!

Eating Out In
Here is a delicious recipe i made today. I call it 'Chicken With Orange Mango Sauce' . This recipe is more for you moms and dads or for others wanting to try something new. It's very easy to make and light on the hips. A great meal to eat after the kids have gone to bed or serve it at your next party. Who said you can't eat out in? Oh, did i forget to mention this is not a kid friendly meal. Here is what you'll need:
4 boneless chicken breasts (cut into small pieces)
4 tbls olive oil
1/2 cup chopped onions
4 oz spinach
1 tbls minced garlic
1 1/2 cup orange mango juice
3 tbls red wine
season salt
black pepper
1 cup chopped carrots
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 tbls agave
2 tbls gravy flour
1. Season chicken with salt and pepper. Set aside.
2. In a large skillet over med-heat saute the onions in olive oil for about 3 minutes. Add garlic and mix well.
2. Add the peppers, carrots and spinach and saute for 5 minutes. Add the chicken and brown it on all sides or until you see no red.
3. Add the orange mango juice, red wine and cook for about 10-15 minutes. In the meantime add a little water to the gravy flour in a small bowl and mix into a paste.
4. Add the gravy flour paste and agave to the chicken. Mix well. Lower heat, cover and let chicken continue to cook for 20-25 minutes more or until well done.
Note: Serve over cooked rice, couscous or pasta. Serves 4

Mac & Cheese On The Go!
Hello moms and dads don't know what to pack for tomorrow's lunch? Next time you make mac & cheese add butternut squash to your recipe and place it in a coated muffin pan. Top with bread crumbs mixed with butter ontop. Bake for 15- 20 mins. Voila! Mac & Cheese Muffins. If you have a mac & cheese lover they sure will go for this. Enjoy:)
